Summer Eating

Lately we’ve been getting tired of traditional lettuce salads. Amy found a recipe for Chickpea salad that I thought we’d try. I made some changes to it, yet it turned out great. To make it you need:

-2 cups of chickpeas

-2 cloves of garlic (minced)

-2 small roma tomatoes

-1/2 cup green olives chopped

-1 teaspoon olive oil

-salt and pepper

-2 tablespoons of lemon juice

Mix it up and put it in the fridge for a couple of hours for the flavor to come together. We grilled some Yves “Chicken” skewers to go with it. They grill up very well.
